Όντως έχει να κάνει με το sharing και πιστεύω πως η λύση είναι εδώ:

Πρώτα εγκαταστήστε το πακέτο samba στο ubuntu και επανεκκινήστε το σύστημα.
Στο windows 7 κάνετε τα ακόλουθα:

Local Policies - Security Options
Network security: LAN Manager authentication level
Send LM & NTLM responses
Minimum session security for NTLM SSP
Disable Require 128-bit encryption
my SMB server worked after changing those two options

Seems that samba doesn't support 128-bit encryption (or I haven't configured it to do so)
